I love quick breads. That love probably started when I was a kid and my mom made zucchini bread, but it might also be more recent. These days, my dad almost always begins with a slice of one of these gluten-free quick breads. They’re delicious, and once you get to know your oven and how to test for doneness, easy to make.
If you’re new to quick breads, I suggest checking to see if the bread is done using two different methods. The fastest is simply pressing lightly on the top of the bread when you pull it from the oven. If it feels spongy, but solid, go on to the second method, which is inserting a toothpick or a cake tester. And by the way, my preferred cake tester is one of those old turkey lacers almost every kitchen has. It’s longer than a toothpick and it doesn’t kill part of a tree every time I use it. Happy baking!
