Years ago, I had my first chocolate chip macaroon while we were on Kauai. I fell in love with the combination of sweet coconut and chocolate chips immediately. Recently, I received this recipe for Almond Joy Macaroons from KC, one of my advance readers. I’d never thought about adding almonds to our chocolate chip macaroon recipe, but what a great idea!

Almond Joy Macaroons
What could be better than almonds, coconut, and chocolate chips in a cookie?
- 14 oz bag sweetened coconut flakes
- 2/3 c salted almonds
- 2 c. Semisweet chocolate chips
- 14 oz can sweetened condensed milk
- 1 tsp vanilla
Preheat oven to 325 degrees
In a large bowl or stand mixer, combine all ingredients together and mix until all liquid is incorporated.
Drop by spoonfuls on a cookie sheet lined with parchment paper and flatten slightly.
Bake 12-14 minutes or until golden around the edges.
