Filling

  1. Add 1 tbsp. olive oil to preheated skillet and soften the onion for about 3 minutes

  2. Add meat and green pepper and cook until meat is lightly browned and vegetables are tender.

  3. Stir in tomato sauce, corn, olives, garlic, lime juice, sugar, the 1 tsp salt, chili powder, and pepper. Simmer 20 to 25 minutes, or until thick.
  4. Turn off the heat and add the cheese stirring until melted. Turn into a 9x9x2-inch baking dish.

Topping

  1. When there's about 5 minutes left on the filling, stir the cornmeal and 1/2 tsp salt into cold water. Cook stirring constantly over medium heat until thick.

  2. Add butter and mix well. Spoon over the filling.

  3. Bake at 375 degrees for about 40 minutes.
