This is an easy-to-make soup for a cold winter day when you need something hot to warm up. It’s healthy and lean, but feels like comfort food! What could be better?

- 1 lb broccoli Rinsed and cut into large chunks
- 2 cups Russet Potatoes Peeled and cut into chunks
- 7 cups chicken or vegetable stock We use low-sodium
- 1/8 tsp sea salt
- black pepper To taste
- 1 cup shredded cheddar cheese Optional
Ingredients

- Put all ingredients in soup pot
- Place over high heat and bring to a boil
- Reduce heat and simmer for about 25 minutes or until potatoes are soft
- Remove from heat, puree soup with an emulsifier. (Or puree in batches in a blender or food processor and return to pot when done).
